The fruit for this wine was harvested on 29th March and 5th April. Reductive handling of the juice and early morning harvests while the grapes were cool helped retain maximum fruit flavours. The clear, bright juice was cool fermented 100% in stainless steel with selected yeast strains to promote fruit aromas and flavours. Some post ferment lees contact was allowed to encourage flavour integration and increase mouthfeel and complexity.
The blended wine was gently fined with an organic approved yeast product prior to bottling in September 2018.
Residual sugar 2.7 g/l
