Winemaking notes

Hand crafted using the European tradition of blending both red and white wines to create an aromatic, fruity Blush wine.
Dedicated blocks of Pinot Gris, Riesling and Merlot were leaf plucked early in the season to expose the grapes to the sun and promote ripe fruit flavours.
Both the Pinot Gris and the Riesling components were harvested on 29 March 2018, destemmed and not crushed. The berries were gently pressed and allowed to settle for 2 days. The clear juice was racked and combined for fermentation in stainless steel with specialist yeasts designed to promote expressive aromas and rich mouth feel.
The addition of a judicious amount of Merlot to the white blend provides summer red fruit flavours, attractive watermelon-like colour and a subtle tannin focus.
After light fining, the wine was bottled on 2 August 2018.
