The fruit for this wine was harvested on four different dates in April 2017- between the 10th and the 26th. Reductive handling of the juice and early morning harvests while the grapes were cool helped retain maximum fruit flavours. The clear, bright juice was cool fermented 100% in stainless steel with selected yeast strains to promote fruit aromas and flavours. Some post ferment lees contact was allowed to encourage flavour integration and increase mouth feel and complexity.
