2007 Kaimira JUNE Méthode TraditionelleKaimira JUNE Méthode Traditionelle 2007 Tasting notes Light gold colour with lifted citrus blossom aromas and a nutty complexity. It has a good mouthfeel with lots of frothy mousse, and is a refreshing, citrussy bubbly. There≠s sweet Meyer lemon and toasted nuts on the crisp, lively palate, finishing dry with a hint of toffee apple. Winemaking notes This is a sparkling wine made in the traditional method with a secondary fermentation in the bottle. It is made from 23% Pinot Noir and 77% Chardonnay. The grapes were hand picked and very gently pressed to extract juice without colour and minimal phenolic pick up, with the hard pressings discarded. The juice was then settled and fermented at a steady 16°C. The wine was then finished and filtered prior to bottling under a crown seal with a yeast and sugar addition for the secondary, fizz-producing ferment. It was matured on lees for 24 months to allow the yeast to break down and contribute flavour. The final step of disgorging and labeling was carried out in November 2009. |
